You should believe it.  How does it defy all logic?  If you shoot a FF sensor in DX mode you are shooting on an APS-C sized area of the sensor.  How is that any different than using a DX camera?  It's not.  If you believe that you get shallower DOF on a full frame camera compared with DX then you should believe that when you shoot your FX camera in DX mode you are back to the DOF of a DX camera.

I am frequently encountering this 1/4000 limitation. I guess I just won't be able to shoot at f/1.8 outside... true this is a white dog, but lots of subjects are white, especially the sky. And I had this problem with the brown dog too. And this shot was underexposed even! I'm not interested in playing around with ND filters on and off in the field when I'm paddling down a river or riding my bike. My CNX2 won't take the NEF files yet, have to upgrade, so I just converted it to jpeg in the free Faststone image viewer and then brightened it up in CNX2 as a jpeg afterwards.

1/4000 should not be a limitation that stops you from buying this camera.  It really shouldn't.  Get a good quality ND filter if you absolutely have to shoot at f/1.8 in full sun.  You also have the option to turn the ISO down to the equivalent of 50.
