X100s for street photography. "Shooting from the hip " technique?

Greetings,

I'm interested in the X100S for candid street photography.

Can you set up the X100S for a preset manual focus distance, say for example 10 feet, (hyper focal distance) and still be able/want to use Auto Focus?   And manually set f stop, shutter speed, and ISO?

The reason I ask is I want to use "shoot from the hip" technique for street photography where I don't have to raise the X100S up to my eye.  So basically I want to set up X100S as a quick "point and shoot" camera.

Or is it better to set the camera on Auto Everything including AF?    Does that setting slow the camera down ie. focus and shutter lag?

How have you set up  your X100s for candid street photography?
