In simple photographic terms, 12 bit files have over 4,000 tones, and 14 bit files have over 16,000. 8-bit jpegs only have 256 tones. This won't matter if you don't start adjusting exposure/contrast in PP. But if you do like to get the most tonal graduation out of shadows and recovered highlights, 14-bit files can be pushed a lot farther before banding or posterization becomes visible.
