ND Filters: Some Basic Questions

ND Filters: Some Basic Questions

I've used ND filters just one time, on a Canon Pro1 to take some dreamy looking waterfall pics that came out really well. But recently I read something that talked about using ND filters on sunny days to do something to affect shutter speed and depth-of-field on DSLRs. Whatever it was, it made me curious.

When also do you want to use ND filters?

The ND filter kits come in threes: ND4, ND6, ND8. Do you ever stack and combine them? Might I want to carry all three, all the time? And if not, and just one will usually do, which one?
