ISO settings question


I've actually been using D700 for 4years now and now switched to D4S, but my question here might sound kinda newbie though.

For my D700, I've been typically setting my own ISO (not auto) as I try avoid it from going too high (and also was trying to 'learn' more about what ISO to use in what situations etc while most photos are landscape and portraits of my wife) .

For my D4S however, given it performs quite well even at high ISO levels, I am thinking of setting to to auto (and also these days most shots are of my son who just keeps running/moving etc and I don't wnat to miss out capturing his facial expressions ).

Just wanted to check, do most of you experts typically set your ISO sensitivity before taking each set of photos, or set it to Auto ISO sensitivity control with min shutter speed? If the latter, what min shutter speed would you advice?

Appreciate your advice and just hoping for construction responses.  Thanks.
