Does anyone use an Oly 75mm 1.8 with their GX7 in low light.

Yes and yes. The 75 only sits in my GX-7 bag - I think it is a perfect pairing.

This lens is a bit heavier than the Oly 45 and Panny 25 and wondering if the GX7's IBIS is up to the task in very low light.

Yes. I use it for theatre productions to get close in and I have no complaints and haven't noticed any shots blurred due to IBIS failure. My only failed shots are when some idiot lighting tech, when told not to use fluorescent or arc lighting for the photo sets, decides to use fluorescent or arc lighting for the photo sets - rendering eShutter less useful.

Now you just need to judge am I good enough to have a useful opinion for you or am I pleased by any old body/lens combo and my opinion is useless :).

The reason I was asking is that I recent used my 12-35 f2.8 and I was having an issue with blurred shots. Admittedly, I was holding the camera with one hand over my head. Then I switched to the Oly 45 and most every photo was tack sharp. Obviously the 45 is much lighter and faster but I had some concerns about using a 305 g lens (the 12-35 is also about 305g) with the IBIS.

I'd think the heavier lens may help - more inertia to the body - less for IBIS to do.

I do find that even with the 12-35/2.8 the shutter speed in Aperture-Pri is still set to quite optimistic values - made worse if intelligent auto ISO is set - an issue I don't get with the Oly lenses I have. The reason I can't speculate as there is now so much computation of variable parameters going on in modern cameras that it would just be speculation.

I definitely use Shutter Pri almost exclusively  in lowish light because of this.
