RAW-Beginner's question

I have been shooting jpegs over the last 11 years using different Canon Powershot cameras, G3, S3, and now G11, but have not tried RAW until recently. My "trigger point" was the ability to edit RAW in a dedicated editor in Photoshop Elements 12, to which I recently upgraded. Comparison between my edited RAW images to conventionally in PSE 12 edited jpeg did not "blow me away", meaning the differences were subtle in my opinion.

I am not sure which settings - beside RAW - I should use in my G11 for best RAW results. I have still been watching the histogram and applied exposure compensation before shooting. Adjusted WB to the shooting situation, sun, cloudy, indoors, fluorescent etc.

I am wondering if I would use RAW exclusively going forward, should I just set my camera to "P" and just shoot everything in kind of "auto-mode" meaning no exposure compensation beforehand, WB on Auto, ISO on Auto, etc.

Any advice would be highly appreciated. I have gotten great responses to questions in the past and hope the community will "pitch in" again about this question(s).
