Bright colors with NX300 & NX20

I like to push the exposure to the right when possible using the histogram. This works fine for me except when bright reds and yellows dominate a photo. The histogram is not sophisticated enough to show this in advance.

Here's an example of planning an underexposure of ev -0.3, but I still lost some detail in the brightest colors:

I have become quite confident in nailing exposure in most situations. But, for this situation bracketing is my best idea. Anyone have any other thoughts?
