Sunny 16 on the 7D — how much adjustment is needed?

On Sunday I want to try shooting an entire news assignment on manual exposure, using only the Sunny 16 rule. Forecast is mostly sunny, about 80 degrees, likely near-cloudless. The assignment will be from about 12:15 to 1:45 in the afternoon.

Should I compensate for any natural over- or underexposure on the 7D's part? If I went strictly by the Sunny 16 rule, my reference setting would be ISO 100, 1/100 and f/16. By default I'd like to set my camera to ISO 100, 1/800 and f/5.6 (it's not a fast-moving event so hopefully, that's a high enough shutter speed).

So if you regularly shoot manual on the 7D, I'm open to learning what tweaks I need and in which direction. Thanks.
