Hey there, I can only speak for the NX300, I do not have a NX2000 to check that for. On the NX300 you can change shutter speed and aperture while recording, but not iso (must be set before starting). Of course the shutter speed is also restricted to being at least as fast as the format you're shooting in, so 60 fps must have a shutter speed of at least 1/60. It does not let you do something like set the speed to 1/30 and record each frame twice. The formats it supports are 1080p at 30 or 60 fps. 1920x810 at 24 fps (cinematic style). 720p at 30 and 60 fps. 640x480 at 30 fps and 320x240 at 30 fps (which can be sent wirelessly up to Youtube). Those are NTSC, you can also go down to the system menu and change it to PAL, which will change all 60 fps above to 50 fps and all 30 fps above to 25 fps, the cinema 24 fps remains the same.
