A7R: Why is IQ in EVF Magnify > RAW file?

I noticed a strange thing which is perplexing me, and I wonder if others share this, or if I have a defect or is there something I am missing with my A7R set-up. It's difficult to explain, but I'll try my best:

When manually focusing in the EVF, using the magnification feature, I can see a heck of a lot more detail, sharpness and much less noise than in the subsequent RAW file that I take, after zooming in to the same level. Zooming in to the captured image, it never looks a s good as the magnified image in the EVF did.

I assume this is normal, since my files look pretty good. But I can't help but think instead what if they could be captured with the same detail and clarity I saw in the magnified image in the EVF before the shot was taken. That extra image information was there, so what happened to it?
