75 f/1.8 or 35-100 f/2.8 torn between the two

I believe it really depends on what you shoot.

I'd buy based on what I use or have used the most rather than a bit of quality difference or aperture.

Alternatively, what focal lengths are used the most by photographers you admire or in pictures you admire? FWIW, a 35-100/2.8 equivalent is one of Art Wolfe's two favorite lenses. http://blog.artwolfe.com/2012/06/whats-in-arts-bag/  This may be helpful if you shoot similar things and useless if not.
