High key photo and bit depth

Here's a picture of my two dogs.  The one at the back is pretty badly disfigured in this picture. I'm sure over exposure of the background doesn't help, but I wonder why this is so unrefined in that ultra high contrast area. I'm using a D90 with an AF-S 85mm f.1.8, at its largest aperture.  If I were to use a more recent camera with a higher dynamic range, would the high contrast background appear more smooth and graceful or is this simply a function of being so high in contrast...  or something else?
