Medium format photography the old way, is it advisable?

That’s right. A photograph is an object of art, while the art of photography is found in the photographer, who is the subject of art. At least that is how folks understood it back in the old days.

Photography certainly can be art. It can also be garbage. Although, FWIW, a lot of what the art snobs think is good, actually blows chunks.

Well, we live in a confused age, where progress in the arts is seen as being inevitable, like progress in the sciences. But artists make the kind of things that art schools teach them to make, and teachers teach what they themselves have been taught, gallery owners exhibit what is made, and patrons like what gallery owners tell them to like — it’s only natural.
