I would recommend the D610 plus the 24-120mm f4 which is a great combo, with decent 5x reach. If you want longer add the 70-300mm when you get the chance (as you say your 70-200mm will not reach as far on FX as DX in equivalency), which 70-300 is not too expensive to add.

I would go with a 24-120mm f4 over the new 24-85mm FX lens for bit more reach, and less switching lenses for walk arounds unless you need to. Add some primes when you can when you want very shallow DOF.

A D800 may be overkill for casual user, unless you would want to spend the money for top camera. D610 is closely matched, just a few features are less (but it is smaller and lighter which can be a pro for some), which these few extra features may not be important for your use.
