You probably need to clarify what you're looking at in order for anyone to answer your question completely. Perhaps a couple of comparative images or crops?

The pixel size/spacing of the D7000 and the D800 is very similar, so if you're looking at 100% crops from each, processed in the same way, the sharpness should look similar. But if you downsize a 36 MP D800 image to 16MP, you should be able to make it look quite a bit better than the D7000 image. Or, if you leave the D800 image at 36MP, you should be able to print quite a bit larger than you'd be able to do with the D7000.
