I do this all the time, travel with only 3 lenses.  My choices:

Voigtlander 20mm f/3.5

Nikon 45mm f/2.8

Nikon 105mm f/2.5

I fit two lenses in a small Think Tank bag on my belt and my camera strung across my chest, and my gear doesn't get in the way of pretty much anything I want to do.  As for IQ, these lenses might not match up completely against some others in precise tests, but from a practical standpoint I've never been happier with the results from any other lenses in these general focal ranges (although I've never tried the Zeiss 21mm, which probably blows the Voigtlander away, but . . .).

A fourth would depend on the destination, but would be something longer (200mm f/4 if I want to stay light, 180mm f/2.8 a bit larger and heavier but doesn't overwhelm, 300mm f/4 if need some more length and not hiking with it, extension tubes if its flower season).
