This is a good review.  I'm also puzzled by AF On - I'll have to play with it.

I had the GX7 for about a month or 2 as well.  I had the E-M5 - and I wasn't sure I was going to keep the GX7 - but I quickly fell for it.  I think it's a better camera, simply more mature.  I tested the IBIS to be about 1 stop worse than the E-M5, which is still really good (this test was normal kit zoom lens range).

Tilting EVF: one neat purpose is to tilt it out of the way when using the rear LCD, so that you're not constantly activating it.  On the E-M5 I kept activating the EVF when I was using the touch screen - and it kept driving me nuts.  Yes you could disable the eye sensor, but then you had to mess with toggling the displays.  With the GX7 - just tilting it up a bit already takes care of this.  Plus, tilting it up a bit also avoids it hitting your chest all the time, if you like carrying the camera around your neck.

Menus: I have no idea why people consider the Olympus menus difficult to use and the Panasonic's easy.  Now granted I always shot with Olympus cameras - so I must be biased, but I find Panasonic's equally extensive menu system, without any organization, to be a big mess frankly.  You keep have to scroll through 8 pages of menu, without any logical organization.  If this is what makes it easy for people, I'm not sure if they realize that on Olympus cameras, you can do the same (scrolling through all the menus).

I'm still struggling with figuring out the optimal way of working with the camera, guess it will just take time.

Pluses over the E-M5 for me are the pin point focus with enlarged image, manual focus with enlarged image (focus peaking is meh) , electronic shutter, built in flash, custom settings on dial, better EVF (and LCD)

Minuses from the E-M5: mechanical shutter causes more shutter shock (and is louder, but I got to like the sound), lack of weather sealing, slower fps with mech. shutter, doesn't seem as bullet proof, lack of IBIS during video

Overall, I was surprised how much more serious photography oriented the GX7 was (with for example the focus enlargements, custom settings etc.
