The 28mm would. But they'd be large. So the crop chops them and all is well?

you are talking about 2 different things here.  the GR 35 and 50 crops are just crops; pixels are simple chopped off as if you did it yourself in Photoshop.

as for the nose being large...that's affected the DISTANCE of the camera from the subject. a telephoto will not make those exaggerations because it cannot get close enough to focus (most of telephotos have long minimum focus distance) or cannot get close enough to fill the frame.

you can make an undistorted wide angle shot; just don't get too close and be level as much as possible.
