No, D800 will not clearly out-resolve a cell phone that has more pixels in it. D800 is a better camera by every parameter, just like it is better camera than any of mFT camera by every (image) parameter, but it does not out-resolve a phone camera that simply has more mpx in it.

Obviously they could not, they (I think you mean Olympus) do not make sensors. And even if they did, it would not be a hell of a camera to look at. Except the pixels, and probably the price.

especially with lenses like the Olympus 75mm, which clearly outresolves the best current MFT sensors. But pixel counts that high are not really practical, because they won't be anywhere near as sharp as they are now at the pixel level,

It is about the image, not the pixels.

the files would be huge and difficult to deal with, and motion blur, etc., would become much more obvious.

Aside from that, there's nothing that says MFT manufacturers couldn't design massive $3000 F/0.6 lenses for their systems to compete with the honking lenses on FF. It's just that this wouldn't differentiate them from CaNikon. The whole mission statement of MFT is for small size and weight, while still maintaining image quality that will please 99% of the people.

It would differentiate from CaNikon by a large margin. Those f/1 lenses are already priced beyond comparison (to their FF equivalents), and that is questioned enough as not to have it, any more push in that direction would simply render it unpractical, if not completely useless.
