The Olympus cameras are very customisable so you should be able to set it up to do what you want.

As far as the EVF is concerned it is a different experience but after using one for a while I find that my dSLRs OVF look strange and miss a lot of the information that you get with an EVF.

I believe the lag of the latest EVFs in good light is now less than the mirror blackout in a dSLR and the ability to boost the EVF image (at the expense of graininess) enables you to see things in poor light that you can't see at all in an OVF.

It's a bit like camera ergonomics. People who use brand X often hate brand Y's ergonomics after spending 5 minutes in a shop with the camera.

After a few weeks of use people generally adapt quite easily.

Obviously if you're a sports shooter or similar  (particularly in low light) you may prefer an OVF but for most situations EVFs work as well as OVF and better in some aspects IMHO
