Thank you everyone for your suggestions!

Now I am down to two options:

a) Nikon D5100 + AF-S 18-55mm VR Kit Lens for $440

b) Canon EOS 600D + EF-S 18-55mm IS II Kit Lens + EF-S 55-250mm IS II Kit Lens for $590

Do I go with a) and save up to buy an all purpose lens like 18-105 mm or a telephoto like 55-300 mm in the future or go with b) which is more or less a complete set?

Another poster already mentioned this.  Go to the store and hold the cameras in person.  You will know right away which is the camera to go with.  Nikon and Canon have different sized grips, so depending on your hand size, you will like one but not the other.

On the lens, because you don't know what you want, you should get the 18-55mm kit lens, which is a bargain when purchased with camera.

If you always carry 1 lens, then you probably want all-around lense like 18-105.  If you want telephoto zoom for specific usage, you can get 55-200 or 55-300.  Or you might find that you prefer primes: 35mm, 50mm, 85mm, etc.
