36 Mpix vs 12 Mpix

Obviously, the big difference is the 36 Mpix and, for me, that justifies the incremental cost. In my case, that cost is relatively low as I got a refurbished D800 for $2K and will sell the D700 for $1500.

A few features that also positively differentiates the D800 from the D700 are Easy ISO, 1/FL option for Auto ISO, 2-axis virtual horizon, improved low light focusing, ISO 100 availability.

Negative (financial) factors are need for new L-Bracket and new spare batteries.

My 2011 MacBook Pro has no problems with the increased file sizes, so that hasn't been an issue.

Also, I think that the difference in the two crops I posted in the OP, while not as significant as I had expected, are significant nonetheless when the need for cropping does arise.
