As for overlap, some say not necessary but the general rule I learned back in my Navy Days was to have that overlap so there is no guesswork when doing them manually back then, or for the Stitching Software today. I generally pick an object 9/10's from the left in the image to line up 1/10 on the left for the next image. Haven't had a bad result ever.

It's fairly easy to try several for free. I did just that about a month ago. I ended up liking PTGui best. It gave me consistent good results and seemed pretty easy to learn. Most software will give you a free trial so you can decide for yourself.
