Yes, I recommend you take the 80-200.  There are lots of long lens shots to be had in both parks. You probably will see deer in Zion Canyon and may even see large birds (heron) on the river. But the canyon in Zion and the hoodoos in Bryce have lots of details and distant points that you'll want to shoot. A small backpack can make short work of the weight issue.

You can also use the 80-200 in Vegas - the strip has lots to shoot and the longer lens can get nice tight shots of the details in the architecture and decorating. Be sure to take a ride on the upper level of the double-decker bus on the strip - views of the strip you can't otherwise get without getting run over.
