There are a few basic techniques for air shows, that give me OK results, I don't consider myself an expert by any means, I only attended 3 air shows so far.

AF: AF-C and central focus point help keeping planes in focus,

Apertures between f/8 and 11 provide some DOF and compensate for small focus errors. Exposure  compensation set to +1 .. +1.7 to compensate for the bright sky.

Shutter speeds vary depending on A/C type. Jets work well with 1/800 or shorter, for all planes in flight but especially for props it pays off to learn panning smoothly and keep speeds between 1/200 and 1/400.

I adjust ISO as needed to make aperture/shutter speed combinations work.
