It makes a difference how sharp the video's picture will be (think close ups) and how motion will appear (waterfalls are a good way to see the difference) depending on the subjects mobility in the video.  There are some people very into video that know way more than I do but that is a couple of basic things.  I only do family videos so I just go for good exposure without being too fancy or artistic.  Do like setting the aperture and manually pulling focus.
