55-210mm vs 18-200mm: What do I give up in their overlap ranges?

I've decided I want a small, stabilized zoom for my upcoming trip to Eastern Europe. Much as I've love to buy the 18-200, I can't justify it. I will have my Nikon 18-200 on my D7000 back in my various B&Bs in case the NEX-6 dies. Paying another $800+ to duplicate it for my NEX just isn't in my budget. And boy, that 18-200 Sony is a chubby puppy.

Reluctantly, I concluded that I need to make do with the cheaper 55-210. Since I will also be toting a great copy of the 16-50 PZ, and my Leica 35mm f1.4 Summilux and 90mm f2.8 Tele-Elmarit and 8mm Rokinon, this lens would be mainly for shooting medium-long when I didn't want to change lenses much.

And so, to see what I'd be giving up in the 50-200 range with the cheaper zoom, I went to www.photozone.de and copied their resolution tests, and put them side by side: 50-200 range of the 18-200 on the LEFT, and the 55-210 on the RIGHT

Help me - tt appears as I read it that the two lenses are darn competitive in resolution, with a clear edge to the 55-210 at some focal lengths.

My questions:

1. How does this square with the experience of people who shoot photos instead of resolution charts?

2. What am I giving up besides 18-55mm focal length with the less expensive lens?
