For what it's worth, which may not be much, I use the Pv button for focus.  I am a left eye shooter and believe me you can not make the change in the eye you use once you are set in your ways.  The back button on the 7100 and the 7K before it make it too awkward to use effectively.  I had set every other Nikon body, D3, D700, D800 to use the back focus button and had no problems.

Moving it to the Pv button up by the lens lets you separate focus from exposure lock and still not endanger either your grip on the camera, your glasses or even your nose.  Takes a bit of practice but your right middle finger is right there anyway so it does work.  You do lose a stop down preview but I don't miss that enough to go back.

Not saying it will work for everyone but it does for me.
