I have a T1i and its our primary DSLR still ... other than the touch screen and remote flash control, the successive Rebels have had minimal upgrades in terms of image quality. The T2i-T5i all share more-or-less the same sensor and its a relatively minor upgrade over what came in the T1i. You can look at my gear list to see what we've added over time.

We've added lenses and a better second body (upgraded that from a 300D to 450D/XSi when I found a good deal in a pawn shop), but I have no particular wish to upgrade the body ... it doesn't limit my photography in any meaningful way.

As for lenses or other equipment, follow your passion.

R2D2's list of fisheye options is dead on ... the Rokinon 8mm (also marketed as Bower, Pro Optic, and Samyang ... they're all the same lens as WilbaW said) is on my wish list too even though we already have a rectilinear ultra-wide-angle lens.

Yes, it goes even by more names (also Opteka, which sells it labelled with 6.5mm...).

The manual is not really an issue with this lens, you just set it to 3meters or so and shoot.

In some brands, the newer version (Samyang, Opteka) allows you to remove the hood, so that you can get a circular effect on a full frame body, but it's probably not so easy to find out which model exactly is being sold, unless it mentions that specifically.

As others have mentioned, the 50mm f/1.8 is a very eye-opening lens and is absolutely worth the minor investment.
