How long a lens do you plan to use with the tripod/head you choose? The "standard" size quick release plate, mostly around 1.5" square, does fine for wide angle thru short tele, but if you want a steady 300+ mm, you should restrict your choices to those with a 3" or longer release plate.  That includes the Acra-Swiss unit already recommended, plus there are others.  The smaller plates can carry the weight of a body+big lens, but probably won't achieve the steadiness you are after if you mount a long lens/camera assembly.  I learned this the hard way.
