You will get the most accurate and pleasing skin tones with Nikon cameras by using Picture Control set to Portrait or Neutral.  Don't overexpose, or use too much color saturation. I find that a small amount of -EC followed with lightening in post gives the best skin colors when shooting in bright light. Also, some believe turning ADL up to High or Extra High improves skin tones as well.
