One caveat: if you shoot camera processed JPEGS, you might want to go with on of the xxxDs rather than the 1100D whose JPEGS are not overwhelmingly wonderful. However, opening the 1100D RAW files and saving them as JPEGs will produce a very good image (as with all RAW files, they will require some degree of sharpening). If you primarily share images by posting them on the web, you will most certainly see no difference between the 1100D and any of the other cameras you mention. (But if you plan to make large prints, I would recommend an 18 MP camera.)

More MP means better chance of cropping with good results.
600D has built-in automatic sensor cleaning, 1100D has nothing600D has a much better finish and appearance, it's not the bargain basement plastic finish
600D has much higher articulated LCD instead of fixed LCD with much lower res
It is worth really looking around for deals. Last summer B&H and Canon had an insane deal for the 600D / T3i... camera body, both of the kit zooms, high speed SD card, Photoshop Elements 8 (okay, not the very latest version), PLUS a Canon Pixma 9000 Pro Mark II color photo printer and $75 worth of Canon 13x19 photo paper. $599 after rebate, free shipping. I can vouch for that deal as I bought it. You could spend more than that on a lame bridge camera.
BTW before I got the T3i I had an XSi, 12.2 mp, very similar sensor to that of the 1100D, and photos I took with it have printed beautifully at 13x19 inches. Still I am sure that the 18mp will be better especially if any cropping needs to be done.
