some amazingly angry people on the internet on this subject, along with wildly differing conclusions between none and 1x memory for large memory footprints (and even more for lower ones)

If you wish to learn how one should decide on how much virtual memory to allocate, here is a good article explaining how it works:

I've gone without, but the hedge bet is leaving a tiny 1-4G one in case a rare write is attempted.

Virtual memory doesn't work that way. If you have none allocated, no write is "attempted". What will happen, simplified to the point of incorrectness, is that when an application tries to commit more memory than is available in physical RAM minus previously committed memory it will fail to do so and not start, or crash if it was running.
