Canon 500D with a Nikon SB26 Flash?

No worries about voltage.  The SB-26 is safe to use.  However, it's advanced features of TTL flash exposure, AF assist light, etc. are unusable on an EOS or other non-Nikon body.

You can use it in the speedlight's non-TTL Auto flash mode (p. 80-84 of the SB-26 instruction manual), or with manually set output levels (p. 85-90).  But you are limited to the EOS camera's M or Av exposure modes so that you can coordinate the appropiate aperture setting and ISO.
