That's why you use AI-Servo.

However, look in the manual.  It says the first shot in AI-servo isn't likely to be sharp.

This is because AI-Servo takes a few samples to lock onto a subject and calculate it's position, velocity and acceleration, and then to use that data to predict where there subject will be when the shutter is released.

The way to mitigate this is to put it in AI-Servo, move the AF-activation to the thumb (* or AF on, depending on camera), then hold it down while you are framing, and make sure you keep that point on the part of the subject you want to be sharp (the eye, in this case).  This can work even with crazy shallow DOF.
