Easy fix...shoot RAW and use Capture NX2 & WB issues especially in artificial or mixed lighting can be adjusted very easy to suit.

or

Buy an Olympus m4/3rds....nice JPEG engine that PP well.

I have D5100 and the skin tones are fine in most situations, even flash....but RAW is great for times when you have WB issues and don't want to gel flash, etc.

I do agree though that I have seen many D7000 & D7100 shots with bad (IMHO) skin tones, but sometimes its user error other times user preference.....have a look at Ken Rockwells site

In general though I think CCD sensors had more pleasing OAC colors, but again personal opinion.
