You are checking JPG images that the OP posted.

Histograms of JPGs posted on the web are very likely much different than the histogram displayed on the camera if the posted JPG comes from a processed RAW file.

You "bother with all those" with RAW files so that you can capture the maximum dynamic range your camera is capable of, or even beyond that with HDR.

JPGs are only the final result after processing RAW files to bring out the picture you saw in your mind, not just the more limited image the camera captured.
