If the D600's strengths (better image quality all around, slightly faster fps without grip, dual card slots, 100% finder, better live view, video, a little smaller/lighter, U1/U2 settings, quieter shutter) weren't important, and the D700's strengths (faster fps with grip, better AF coverage) were important, then you made a very good decision.

Unless you do a lot of shooting at small apertures, I don't see the dust issue as a big problem. I can't point to one shot I've taken that has been ruined by dust. But you certainly can't go wrong with either the D600 or D700. They're both great cameras. Choosing between a used D700 and a new D600 was pretty tough.
