I will give focus stacking a try (after learning how to do it).  Sounds like it might work ok in no-wind situations.

Some stacking software will compensate for movement between frames (much as some HDR software does), it is all part of the process as the subject will change size and perspective as the focus distance changes. The main issue with wind is movement of the subject in each exposure, not between exposures.
