Your 7D uses it's built in flash to communicate with the external flash with pulses of light.

This happens just before the exposure and is so fast you don't really notice it, your 5D does not have a built in flash so you have to mount one on the camera to act as the master and communicate with light pulses to the remote flash.

If you use the newer 600EX RT flashes they have a built in radio transceiver and do not have to use light pulses to communicate. I have a 5DIII and use the 600EX RT flashes and boy are they great.
