The mirror on the 5d will bang into K lens aperture lever

That's most likely why they say EF-S (EF-S is their "cropped" format, correct?). If you want to mount K lenses on a Canon 5d, you have to chop off the aperture control lever and the associated metal guard. I have seen a non-destructive method as well, but I think it depends on the lens if you are able to do a non-destructive conversion or not. After conversion, you obviously can't meter and focus wide open with the camera automatically stopping down for you at exposure time any more. Your viewfinder will be darker at higher f-stops.
