Samsung does it so they can make a common platform to run their software, where each new camera or whatever just have a few changes to the board support package and drivers for whatever hardware changes there are.  This keeps them from having to re-write the same software over and over again for each new product.

Companies are moving more and more to common computing platforms to minimize the number of platforms they have to support.

So a Linux kernel OS probably means that the software is larger and slower than a full custom OS.  The only thing I would worry about with Linux is the camera is going to have some bootup time associated with it like a phone has, the Galaxy Camera has this.

It might be that they are using open source software in their system that they have to display a license screen for that, do we even know for sure they are using a Linux kernel OS?  How long does the camera take to startup the first time?  Like 20 seconds, maybe Linux Edit: sounds like some embedded linux systems can boot on the order of 1 or 2 seconds, so still could be Linux I guess, but I think Galaxy Camera is around 20 or 30 seconds.
