I travel to China twice a year on business and have traveled around the country.  It is a great country and very safe - just be careful of pickpockets in the major cities.

As far as the lenses go, I would take the 16-35 and 24-120.  I think that will cover you for 95% of your needs.  The 70-200mm is heavy and best for sports, wildlife, etc.  It is a great lens but not necessary for this trip.

You may also want to take a fast prime for indoors, but I don't think you will necessarily need it. The 24-120mm is a very good lens and fast enough.
