At first glance your thinking seems rational, but I'd be careful about dismissing the D600/D800 too quickly. The 5DMIII is an excellent camera, and Canon certainly has the upper hand in lenses, but unless there are other overriding factors, to me it comes down to the camera with the best potential IQ, which is the reason I shoot Nikon. I don't shoot the D600, but from everything I've read, even if you get a bad copy the dust/oil issue is manageable and will likely subside in time. Sorry to say, if you're looking for perfection you'll have to find another hobby because there's no such thing in photography.
