You don't and it is not important. All you know is that this is exactly the way the photographer wanted them to look like and this is what he is hanging on his walls.

true - but that does not mean that exposure was in fact optimal for his purposes... I can post any crap and claim that I want it to look that way :-)... so it proves nothing about the exposure - at best it proves that it is useless to argue about tastes when we are facing the the end result.
