Re: Which flash do you recommend to start out with?

430 ex II are very good flashes, with the right set of features and quite powerfull too.

What is important is to be able to use it off camera.  And if you like it, you will want to use more than one flash.  This brings you to the important question of how to trig them.  Indoors, optical triggering is quite good.  Outside, people recommend radio triggering.  For this, the Canon system is supposed to be good.  However, it remains to be seen if we will one day be able to trig non-Canon flashes or studio strobes with this system.

For this reason, I think it is better for now to stay away from the Canon radio system.

Since the 600 are new on the market, I think you have better value with a 430.  You can chose the radio trigger system you like and buy it to trig the 430, for example a Youngnuo 622. If you like it, you can the follow up with the purchase of a 600 that you will be able to use as a controller for your system.  A long cable is a good idea too, but the reach is limited.
