Your dilema is something similar to what I have been also struggling with. Some key concerns are;

-  Weight of gear, (camera, lens, TC's, batteries)

- Reach versatility

- Image quality

- Frame rate

- Auto Focus accuracy

- battery life

- Environment resistance (weather proofing)

- Low light performance

Of your choices, to me the 1DIV would provide the best compromise when paired with your 120-300.2.8 Sigma lens and TC's. It has a 1.3 crop factor, better image quality than 7D , better low light noise than 7D, much better weather proofing than7D, built like a tank, excellent battery life. The 7D would be the least optimal body of the three with the poorest image quality and not so good weather proofing. The 7D AF is least accurate of the three however the 7D is the lightest and has the best reach.  Although the 5DIII is the best choice to address many of the concerns, its main detractor is reach and weather proofing. The 5DIII by far has the best image quality, best noise at high ISO, best AF.

All three bodies have pros and cons.
