When working with lens tilt and the scheimpflug principle you need to remember your plane of focus is just that a flat plane.  Think of a sheet of plywood and if you tilt the plane so the base of your image is sharp and the top of your image is sharp then the plane of focus travels through your image from foreground to background on a tilted plane.  Where the plane travels through the center of your image there isn't anything there and objects in the background are beyond the depth off field for this and you need to attack this problem with different techniques.  Remember you could once tilting you can focus into the scene moving the plane and depth of field keeping the top and bottom within the dof and maybe pulling your center within the dof.
