I used to do it all the time. It's time consuming, and does not look real. Maybe its my photoshop skills, but creating a layer, lassoing thee object you want to keep sharp, and then blurring the background took forever. Some times it didn't look like a picture with shallow DOF. It looked like  a photo in focus placed on a photo out of focus. And I could never get a consistent batch. Like I said, maybe its my skills in photoshop, but I would rather compose and create in camera.
